CULINARY NEWS QUICKES CHEESE FARM On 11th March chefs from the Saunton Sands and the Royal Duchy enjoyed a 3 hour work based enrichment tour and visit of Quickes Home Farm. With the expert guidance of owner Mary Quicke MBE they were taught the art and craft of traditional cheese making, where the skilled cheese makers have over 100 years experience between them, and work to original recipes dating back several generations. The Quickes family, have been farming in Newton St Cyres Devon for over 450 years. 25 years ago Sir John Quicke and his wife Prue built the dairy, where Sir John’s daughter Mary continues to produce outstanding cheeses today. The most famous cheese in the range is the traditional mature cheddar, a far cry from the block cheddars that flood the market today. By slowly maturing a muslin-wrapped truckle for a year, its allowed to breathe, producing a beautiful rinded cheese with a unique and complex flavour. The dairy at Home Farm is set in 1500 acres of stunning Devon countryside, where the 500 dairy cows provide the rich creamy milk to make the cheese, butter and ice cream. Care for the beautiful environment and the welfare of the animals lies at the heart of Quicke philosophy one which we here at Brend Hotels share. www.quickes.co.uk THE DEVON FOOD BOOK “Linking the landscape with the food on your plate” Brend Hotels are proud to be one of the main sponsors of the Devon Food book to be released on 23rd March 2010, written and illustrated by the late, award winning author Carol Trewin and photography by Adam Woolfitt, this is a wonderful food book and companion volume to Gourmet Cornwall and Cornish Fishing and Seafood. The book paints a fascinating picture of how Devon’s Food Culture and Landscape have evolved together. If we can all help to support the local industry, the availability of local produce will eventually become more abundant and more economical, in turn promoting a more ethical means of food supply. It has long been the Brend Hotels desire and ambition to help build these links and the foodfest provides the perfect platform.” This year brought together some of Devon’s finest chefs with Mark Dodson from the Michelin stared Masons Arms in Knowstone starting off proceedings, followed by other chef demonstrations.
